A lot of supporting scientific info. Written several decades ago and provides the basis for analysis in a scientific written piece. Not too difficult for lay person to follow

Noticing that this was a "company" book.....

...I was at first hesitant to order it.
But, I'm glad I did.
The book was full of well-documented information (even though all of it was over 50 years old) that I'm sure is applicable today. And, the references were from actual studies and experiments, not from quoting some other author's book. In other words, based on rsearch not opinion! And, at least to me, highly credible and trustworthy.
The bottom line of this book is that, while not considered a miracle food, or even a complete protein, gelatin is a nutritious substance and is a valuable addition to any diet.
I will be ordering some gelatin based on what I read here....

The book would be much better, and the public much better served

The information is thorough and well-researched, but the writing, and the information it conveys, are both old and arcane.
The book would be much better, and the public much better served, if it were rewritten and updated to make it both more readable and more relevant.
